Finding super simple snacks that you can take on the go when you have allergies or any food restrictions isn't an easy task. These energy balls are super easy and only take about 10 minutes to make. They are also free of all common allergens and gluten.
When I make this recipe I try not to eat all of them all at once. Am I the only one who binge eats snacks? I have a bad habit of eating everything in sight. In all honesty if I didn't have celiac disease or food allergies to just about everything then I would probably live off if doughnuts (shh don't tell my nutrition instructors)!
I find that adding coconut chips adds a yummy crunch, but you could also use seeds or nuts if you can eat them. Feel free to use whatever dried fruit you have, just keep the proportions the same.
1/2 cup dried cranberries
1/2 cup dried apricots
1/2 cup raisins
1/3 cup coconut chips
2 tbsp raw honey
1/3 cup shredded coconut
2 tbsp lemon juice
1. In a food processor, chop together cranberries, apricots, raisins, coconut chips and shredded coconut until well combined.
2. Add in honey and lemon juice and pulse until just clumped together.
3. Roll into small balls with hands (about 1 tbsp) and roll in shredded coconut. Store in a air tight container for up to one week.
